BEVERLY – A start-up to help those in need during the coronavirus pandemic has turned into a new business that recently opened its doors.

Gingrollsandpancit hosted the grand opening and ribbon cutting ceremony as family, friends and community leaders came out to show their support for the Beverly Five Line business.

Jing Murdock, the owner and creator of the Filipino culinary concept, finally revealed everything during a special ceremony.

“It was such a relief to finally open, because once I decided to open the business, it took a while to get everything in order.” Murdoch “It seems like we’re always late. From ordering the equipment to getting all our paperwork in order – it seemed to take forever. However, the community has been a big help, and their support has been amazing.

The business is currently open for orders only on Mondays, Wednesdays and Fridays. Murdock said she hopes that sometime down the road, food or something else will be part of the business.

Although finding employees for the new business was difficult, Murdoch got help from the best person she could think of when her mother, Minda, moved to the United States from her native Philippines this past summer.

“I haven’t seen my mother in 20 years, because when I got here I didn’t get a chance to go back home.” Murdoch said. “I asked my mom to come here and she’s a green card holder now. She’s been so supportive and I couldn’t be happier to have her here with me.”

Murdoch also revealed that her best friend Eugenia Brown has been there since Day 1. Brown has been instrumental in bringing the business to fruition, she said, and is the one who makes the company’s desserts.

Although the business is now running at full steam, Murdoch said she will continue to send free food to those in need, especially back home.

When we started producing food, we only did it to help others during the outbreak of the Covid-19 pandemic. said Mordok. “There were a lot of people struggling at that time, especially in my home country, the Philippines.

“So we started preparing food and sending it over there, and we started giving food here locally to homeless shelters and places like that. Everyone would ask me why I give away my food and I would tell them it’s something I love to do because I know how it feels to have nothing. And I will continue to help in any way I can.”

Murdoch, who moved to the U.S. from the Philippines 20 years ago when she married her husband, Dave, said it helped her make the decision to turn her food donation service into a business.

“I love what I do and I realized that this is my calling.” said Murdock, who is a full-time nurse’s aide and ED Tech in the Davis Medical Center’s emergency department. “So I decided to do the job even though I had a lot to do with my other job.”

When asked where all the energy comes from to do what Murdoch does, “It comes from eating Filipino food. We eat right almost every day and that’s three meals. So eating the right way is how I get all my energy for both jobs.”

Murdoch, who has been making her sweet treats since the outbreak, will be cooking from her Beverley home until the new business opens. She served meals to customers across the county and will continue to provide the same service to those unable to take orders.

“I really don’t know how to do it sometimes; I don’t sleep.” she said laughing. I work 12 hour shifts at the hospital and it can be overwhelming at times. But I really like doing both. My hospital boss always tells me that he wants to stop me with all his energy.

The current menu at Gingrollsandpancit features: spring rolls with pork or vegetarian (roasted or not); Firecrackers Shrimp Lumpia; pancit bihon noodles with chicken; Pork Rib Adobo Combo Meal; Original combination dish: Chicken Adobo Rice Bowl; and leche flan dessert. There are also kamayan and boodle party arrangements.
