Experiences in nature, sophisticated gastronomy, sustainability and support for diversity and indigenous communities are the most representative trends in Mexico’s tourism industry.
According to important players in the sector, national and international tourists are looking for destinations and accommodations that guarantee experiences focused on preserving nature and respecting ancient cultures. “Our consumers want to engage with companies they think are doing good, like sustainability,” says George Hunter, POSADAS VP of Entertainment Sales.
Due to the growth Mexico has received in recent years from internationally recognized chefs, there are many efforts to offer tourists experiences in the middle of nature, accompanied by gastronomy made from organic ingredients and ever-evolving recipes.
For Jalisco’s Minister of Tourism, Claudia Vanessa Pérez Llamas, a destination like Puerto Vallarta has been crucial in developing famous gastronomic creators. “A women’s collective called ‘Ellas Se Juntan’ (Gathered) is a hotbed of new talent that promotes social gastronomy,” she says.

Puerto Vallarta is one of the gourmet gastronomy driven destinations in Mexico, with many restaurants considered haute cuisine. In addition, it hosts the Gourmet Festival, Vallarta-Nayarit Gastronomic and Restaurant Week, among other events focused on presenting new trends and innovations in the wide range of Mexican cuisine.
“We’re constantly working with our chefs, and we’ve included a new corporate director of food and beverages,” said Martina Mayrhofer, Sandos’ associate director of sales for North America, at the Sandos Caracol Resort in Mexico’s Caribbean. So we always improve the offer to do something new.
Other current trends in Mexico’s tourism industry focus on culture and nature involving indigenous communities. “Nature tourism has become Puebla’s number one destination for tourists after cultural tourism,” said Marta Ornelas, Puebla’s tourism minister. The various tours in these destinations include visiting artisan sales and handicrafts.

Meanwhile, Fundacion Sandos collaborates with Maya of Xyaat to do important work, including promoting its products through crafts in the hotel. “We also introduce tours to communities and our guests can bring donations such as school supplies and clothes. They like to help develop destination communities,” says Martina Mayrhofer. She also explained that, in the All Nature Experience program, guests will get to know cenotes, forests and animals from the region. You will also get to know the cenotes, jungles and animals from the environment and approaches of the Mayan culture.
Fundación POSADAS also focuses on supporting its associates and their families. “Now there is a relaunch of the foundation, which has many resources. Along with these initiatives, hotels, tour operators and tourism service providers in Mexico develop programs aimed at the growing visitor sector in relation to the respect of biodiversity. “For example, 150 of our hotels are Green Key certified, where all these processes are included, and we have a Blue Flag on all our beaches. These certifications show that our operations are clean, sustainable and we care about our carbon footprint. Other industry initiatives are aimed at the special tourism sector with an interest in nature. “We are opening a brilliant new line of business. Last but not least, inclusion and diversity are among the most developed trends in Mexico and are now important aspects of the tourism industry. “The Government of Mexico, together with the International Gay and Lesbian Travel Association (IGLTA) and Queer Destinations, have signed a program to make the country more inclusive and inclusive by raising awareness among all workers in the tourism sector,” said Edgar Weglar, CEO of Queer Destinations.
